https://depindakaaswinkel.nl/?p=178950 Red Velvet Peanut Butter Cheesecake Bites

In collaboration with Hemelssbakken

Ingredients for 16 pieces

Soil:
  • 225g cookies, for example Oreos
  • 90g butter, melted
Cheesecake filling:
  • 250ml whipped cream
  • 300g cream cheese
  • 125g icing sugar
  • 1 tsp vanilla extract
  • 1 sachet of whipped cream stiffener
  • +/- 100g Red Velvet peanut butter
Additional requirements:
  • Baking tin: 22x22cm
  • Baking paper + a little extra butter
  • Mixer
Preparation time : 20 minutes Waiting time : 3 hours Difficulty level : easy

Preparation method :

  1. Preparation Grease the baking tin with a little butter and line the bottom and sides with baking paper.
  2. The base Crumble the biscuits in a food processor or put them in a bag and crush them with a rolling pin. Mix the crumbled biscuits with the melted butter until you have a wet, sandy mixture. Spread the biscuit mixture over the base of the baking tin and press it down firmly with the back of a spoon. Place the tin in the fridge while you make the filling.
  3. The filling Beat the whipped cream with a sachet of whip fix until stiff and set aside. Beat the cream cheese with the icing sugar and vanilla with a mixer until creamy. Add the whipped cream and fold into a smooth mixture. Spoon the cheesecake mixture onto the biscuit base and smooth it out nicely.
  4. Divide the Red Velvet peanut butter Then divide the Red Velvet peanut butter in tablespoons on different places on the cheesecake. Go through it with a knife, so that swirls are created. And smooth it out. Let the cheesecake stiffen in the refrigerator for at least 3 hours.
  5. Serve and enjoy Then cut into equal pieces with a warm knife. Warm the knife by holding it under hot water for a moment. You can add some extra peanut butter as a topping and for decoration! Tip: you can also make the cheesecake a day in advance and let it stiffen overnight.
